Sweet and Spicy Mexican Casserole
Ingredients
2 teaspoons of canola or vegetable oil
1lb of ground chicken (you could also use ground beef or turkey)
1 pack of McCormick Taco Seasoning
1/4 cup water
24 oz. jar of Great Value Pineapple Salsa
1/2 can of red kidney beans
8 oz. pack of Sargento shredded Mexican Cheese
3 Ole Soft Taco Tortillas (about 8×8 in size)
Preparation:
Preheat oven to 375 degrees
Heat canola oil in a medium sauce pan. Add ground chicken. Cook until done. Add taco seasoning and water. Stir and let simmer for five minutes.
Layer the casserole, in a round casserole dish, (I use 2 qt. Corningware dish). Place one tortilla at the bottom, add meat, salsa, cheese, and beans. Add second tortilla and repeat. Lastly, place a tortilla on top layer. Then add more salsa and lots of cheese. Bake for 30 mins.
