    Asian Lettuce Wraps

This is a quick delicious, low-carb recipe. It is great served as an appetizer or as the main course when paired with steamed wild rice. It reminds me of P.F. Chang’s lettuce wraps. If your family likes Asian cuisine, this recipe is sure to be a crowd pleaser. Prep. Time: 30 minutes Ingredients 16 Bibb, Romaine or butter lettuce leaves 1 pound ground chicken breast 1 large onion, chopped 2 tablespoons minced garlic 2 tablespoon reduced-sodium soy sauce 1/4 cup hoisin sauce 2 teaspoons minced fresh ginger 1 tablespoon rice wine vinegar or red wine vinegar 3 teaspoons Asian chili pepper sauce (see Note) 1 can (8 ounce size) sliced…

Our Journey to Becoming Debt Free

I married a financially wise man. Tim didn’t bring any consumer debt into our marriage. The only debt he had was our house. We have been married for 10 years. During which time, we have managed to purchase two new used vehicles and pay for them within 2.5 years or less. I didn’t always appreciate the wisdom God has given my husband in this area. As a result, we had frequent money fights. When we first married, I was a full-time high school Spanish teacher and Tim was (and still is) a full-time Senior IT Analyst. Our combined income was a good six figures. Our bills were paid. We went…

It was as if she had an epiphany or something. I thought to myself, “Really Kellie? Did you really have to put your mom out there like that?” I realized I had to respond or she would keep repeating herself. All I could say was “Mommy is so sorry. Please don’t blow your breath in anyone’s face. I’ll brush them when we…

    Getting Ready for Kindergarten

As a result of developing a local preschool Spanish Program and owning a small teacher consultant business, I have had the wonderful privilege of working with preschoolers for the past 6 years. My experience has allowed me to gain a deeper understanding of how young children learn and develop. I have come to realize, it is never too early to begin preparing your child for school; the earlier the better! Although our youngest daughter, Kellie does not start school until August of 2019, she will be turning 4 soon, which means time is of essence. This school year, I am focusing intently on preparing her for kindergarten, also known in…

    I’m Back…..

Happy New Year!!!!! It seems like forever since my last post. I’ve missed interacting with you guys so much. If any of you are wondering where I’ve been or what I’ve been doing then wonder no longer! For the past year, I have been reflecting and critically thinking about the direction in which I want to go with my blog and social media accounts. I had to take a break and ask myself, “Did I bite off more than I can chew, is it worth it, do I really want to open myself up to the scrutiny that comes with blogging and social media; what is my true goal and…
